Piqualé Vegan Cornbread
Cornbread is one of the most traditional sides with a hearty bowl of Chili. Simple ingredients, easy to make and a smell that brings back memories of your Grandmother serving up a cast iron dish full at dinner. Jiffy, the ubiquitous box of cornbread available at every supermarket, now offers an animal shortening-free version. Vegan as packaged, it takes only a few items from your pantry to have this hot and ready for dinner.
Vegan “Jiffy” Jalapeño Cornbread
INGREDIENTS:
- 1 Box of Jiffy Vegetarian Cornbread Mix 
- 1/4 Cup Applesauce (or other substitute) 
- 1 Tbs Piqualé Original Hot Sauce 
- 1/3 Cup Plant Based Milk 
- 1-2 Diced Jalapeño peppers, plus a few slices for top garnish 
DIRECTIONS:
- Pre-heat your oven to 400°F. 
- Blend ingredients, there will be a few lumps (and that’s ok). 
- Fill your selected baking vessel or muffin tin. 
- Top with a few Jalapeño slices. 
- Bake 15-20 minutes or until golden brown. 
- Add some Plant Based butter and enjoy!
